It's June!
Julie's Favorite Strawberry Rhubarb Pie!
Crust:
1 1⁄2cups unbleached organic flour
1⁄2teaspoon salt
2 tablespoons coconut sugar
1⁄2cup coconut oil or Smart Balance butter
2 tablespoons orange juice (or soymilk)
Filling:
2 1/2 cups chopped red rhubarb, fresh
2 1/2 cups de-stemmed, washed and cut strawberries (in larger pieces)
1 1/2 cups sugar (1 1/4 cups for high altitude)
2 tablespoons minute tapioca
1 tablespoon all-purpose flour
1/2 teaspoon lemon zest
1/2 teaspoon lemon juice
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
3 tablespoons Smart Balance butter, cubed small
Crust
In a large bowl place all of the dry ingredients.
Add Orange Juice and oil, mix with a fork
Pat into 9-inch pan with fingertips. If pre-baked crust is desired bake at 425 for 10 -12 minutes.
Filling
Mix the rhubarb, strawberries, sugar, tapioca, flour, zest and juice of lemon, dash of cinnamon, and vanilla. Mix well in a large bowl and pour out into chilled crust. Dot the top of the filling with the butter. Roll out the other piece of dough and place over filling. Crimp to seal edges. Collar with foil and bake at 425 degrees F for 15 minutes. Decrease temperature to 375 degrees F and bake for an additional 45 to 50 minutes, or until the filling starts bubbling. Higher altitude will take 450 degrees F and 400 degrees F respectively. Let cool before serving.

June cleaning tips, it’s all about the outdoor spaces. This week we are going to address the front patio, front door area. It is the first thing people see up close when they come to your home and it is reflective of what’s inside. It should be clean and welcoming.
Scrub down the door and spray walls to remove dirt and cobwebs
Add a large pot of herbs
Potted trees.. if there’s a plug near, you can add string of white lights to the potted trees for a warm elegant look.
Chair and small side table to enjoy morning coffee
Sign “be nice or leave” to set the expectations of those coming.

One of the things that has come to be recognized is our denial of the need to be connected with nature. Yet to be grounded and ultimately at peace with yourself we must maintain that connection that is so rapidly and by design being blocked. Enough of that! Summer is the perfect time to reconnect with nature and your family.
When we were kids, you’d get kicked out of the house and told to be back by dinner time. You’d ride your bike and run into kids you didn’t know, you’d make friends and play until dinner. Yet our society is teaching young people to avoid direct experience in nature. That lesson is delivered in schools, families, even organizations devoted to the outdoors, and codified into the legal and regulatory structures of many of our communities.
Our institutions, urban/suburban design, and cultural attitudes unconsciously associate nature with doom and aggressive danger—while disassociating the outdoors from joy and solitude. Well meaning public-school systems, media, and parents are effectively scaring children straight out of the woods and fields and its affecting in significant ways. So much so that health care professionals are having to “prescribe” Vitamin N (Nature!).
In Washington D.C., Dr. Robert. Zarr, continued to encourage physicians to prescribe nature, and he and his colleagues have developed a zip code search engine which rates 350 local parks. Now the Vermont Department of Forests, Parks and Recreation has teamed up with doctors to get more people outside and exercising; physician “prescriptions” are free passes to any state park.
